Chicken Tikka
Question: I love making chicken Tikka! Do you know if I should uses salt while marinading or will that toughen the meat? Thanks!

Hey you got to get Sujata to answer that - she knows everything there is to know about preparing and cooking Indian Food - she created this group and is therefore on the group email notification list so hopefully she will see your question and respond. But my view on this is yes, it would toughen the meat, not to mention make it taste quite salty. Also with the various health hazards associated with too much salt, I would say that it is not a good idea. We use very little salt in any of our cooking now and you'll be surprised how quickly you get used to it.
