Method

  • 1) Bring the lentils, onion, celery, garlic, cumin seed and water to a simmer in a large pot over a medium heat.

  • 2) Cover and cook until the lentils are tender - roughly 50 minutes.

  • 3) Stir in the cous cous, chopped tomatoes, curry powder and pepper. Continue cooking until the cous cous is tender - about 10 minutes. Add salt to taste.

  • 4) Blend and enjoy, with freshly baked, seedy bread!

    • 1 cup lentils rinsed thoroughly
    • 1 onion chopped
    • 2 celery stalks sliced
    • 4 garlic cloves crushed / minced
    • 1 teaspoon whole cumin seed
    • 8 cups water
    • 0.5 cup cous cous
    • 1 cup chopped tomatoes
    • 1 - 1.5 tgeaspoons curry powder
    • quarter teaspoon black pepper
    • 1 teaspoon salt
