Method

  • 1.Preheat the oven 350 degrees F (175 degrees c).Grease and flour a suitable pan.
  • 2.In a large bowl, beat eggs, oil, white sugar and vanila together.
  • 3.Add flour , baking soda,baking powder,salt and cinnamon into the bowl.Stir well.
  • 4. Bake in oven for 40-50 min. to check if its ready, poke a toothpick into center of the cake and pull it out. If it comes out clean, the cake is ready.
  • 5. Let in cool in the pan for 10 minutes. Place on wire rack to cool completely. When it is slightly warm, serve. Tip: lovely with ice cream!
  • Ingredients

    • 4 eggs
    • 2 cups white sugar
    • 2 teaspoons Vanilla essense
    • 2 teaspoons baking powder
    • 2 cups all purpose flour
    • 2 teaspoons baking soda
    • ½ teaspoon salt
    • 2 teaspoon Ground cinnimon
    • 1 cup grated carrots ( i add a little more )
    • 1 cup pecans/rasins ( if desired )
    • 1cup oil

    My mum Made this first for me.Made my mouth water. Brilliant recipe. Quick and easy too. Add in some rasins if your a fan of them or pecans really top it off . Enjoy and fave!
