Turkish Shepherd's Salad

Method

  • Slice and chop the onion
  • Dice the tomatoes
  • Cut the cucumber into small dice
  • Remove seeds and stlks from the peppers.
  • Dice peppers
  • Coarsely chop the parsley/coriander
  • mix all teh ingredients together
  • Season with the oil and lemon
  • Sprinkle with salt

  • Serve with lots of lemon wedges

    • 1 mild/sweet onion
    • 3 sweet peppers (medium size)
    • 1 cucumber (medium size)
    • 1 bunch coriander or flat leafed parsley
    •  olive oil
    •  lemon
    •  salt to taste
