Method

  • Set oven to Gas reg. 4/5 or 160 degrees Centigrade
  • Mix dry ingredients together
  • Slowly melt butter and syrup
  • Add approximately 20 dessert spoons of warm water
  • Stir mixed dry ingredients with the butter mix
  • Pour into 2 greased sandwich tins
  • Bake for approx. 25 minutes until light & spongy to touch
  • Once cool, sandwich together with strawberry jam and top with sieved icing sugar or chocolate icing

    • This might sound like a stupid question - but at what stage do you add the golden syrup to the recipe? - I'd love to know cos the cake sounds perfect for my friend's daughter who is allergic to eggs

    • 200gr Self-raising flour
    • 2 tablespoons Cocoa powder
    • 75gr white sugar
    • 75gr butter
    • heaped tablespoon golden syrup
    • ½ teaspoon Bicarbonate of Soda
