Method

  • Cut the rabbit in pieces, season well with freshly ground black pepper and salt.
  • Fry in oil until half cooked.
  • Place the rabbit into a baking dish and brush with English mustard.
  • Sprinkle chopped thyme on top, pour over melted butter and finish cooking in a moderate oven.
  • When ready cooked serve the rabbit on a bed of straw potatoes.

    • To Taste English mustard
    • To Taste chopped thyme
    • 90g butter
