Method

  • 1. Spinkle the shallots with 1 tsp salt and leave to soften.

  • 2. Mix dressing ingredients.

  • 3. Combine dressing with salad ingredients.
  • Ingredients

    • 750g Cooked chicken shredded
    • 100g Shallots, very thinly sliced
    • 400g Chinese leaf, core removed thinly sliced
    • 100g Beansprouts
    • 1 Large carrot, finely shredded
    • 15g Mixed coriander and mint
    • 40g Roasted peanuts coarsely chopped

    • DRESSING
    • 3 tbsp Fish sauce
    • 3 tbsp Lime juice
    • 1 tbsp Rice vinegar
    • 2 tbsp Caster sugar
    • 1tsp Garlic, minced
    • 2 Red chillis, finely chopped
