Method

  • 1. Separate eggs and whip whites
  • 2. Fold in 6oz of sugar
  • 3. Fold egg yolks into the mixture
  • 4. In a separate bowl whip the cream with the lemon juice and 2oz of sugar
  • 5. Mix together both mixtures and freeze in a pyrex bowl
  • 6. You can also take it out after a couple of hours, mix again and refreeze to make it fluffy

    • I made it with a large pot of cream and it was delicious - but i needed to add a couple more teaspoons of lemon as the cream was quite dense and the lemon wasn't coming through initially
