Avocado and Papaya Salad

Method

  • 1. Lay the mixed leaves out on a large flat platter.

  • 2. Slice the papaya and set aside 2 tablespoons for the dressing. Slice and cube the papaya and lay on top of the leaves.

  • 3. To keep the avocado from going brown - first immerse in a bowl of boiling water - then slice in half - take out the stone and slice into cubes and add to the platter.

  • 4. For the dressing put all the ingredients into a food processor and pulse together until the seeds are thoroughly mixed in.

  • 5. Pour the dressing over the salad just before serving.

    • 2 avocados
    • 2 Papaya. peeled and chopped

    • FOR THE DRESSING
    • 130g sugar
    • ¼ tsp mustard powder
    • ½ large onion chopped
    • ½ cup white wine (balsamic) vinegar
    • 2 tablespoons papaya seeds
