Shell the prawns. Crush the garlic. Grate the ginger. Chop the green chilli, if included, likewise the preserved lemon.
In a heavy-bottomed frying or sauté pan, heat the olive oil over a modest flame and let the garlic just take colour before adding the ginger and all the other seasonings except for the lemon and the coriander or parsley. Blend everything together for 1–2 min before tipping in the prawns and the lemon and stir-frying a further 2–3 min. Snip coriander over the prawns and serve.
