Method

  • Cook the potatoes in large pan of boiling water until tender but still firm.
  • Drain and leave to one side.

  • Add 2 parts mayonnaise to 1 part Mustard, salt and pepper and mix gently until well blended and potatoes completely covered.

  • Add all other ingredients and stir through gently to mix evenly but ensuring you do not break the potatoes and serve.

  • Ingredients

    • 2lbs baby potatoes with skins halved
    • 1 red onion. thinly sliced
    •  mayonnaise
    •  Mustard
    • 8 cherry tomatoes quartered
    • 4 spring onions finely chopped
    • 1 yellow bell pepper chopped
    •  salt and freshly ground black pepper
