Salt and Pepper Chicken

Method

  • Heat oil in frying pan.

  • Rinse chicken breast and dry on kitchen paper.
  • Dip individual pieces into egg yolk and then coat lightly into cornflour.

  • Place pieces into hot oil.
  • It may take two or three loads at a time to cook all pieces.

  • Once the batter of the chicken is golden brown remove from oil and into a pyrex dish.

  • Whilst still hot sprinkle with preferred amount of salt n pepper seasoning mix (available in all supermarkets or fruit and veg shops and some meat counters).

  • Stir through to makesure all chicken is covered and add peppers.
  • Place in oven for 10 -15 mins and then serve whilst hot.

    • 6 Chicken breast diced
    •  salt and pepper seasoning mix
    • 1 red pepper. chopped
    • 1 green pepper chopped
    • 3 egg whites
    •  corn flour
    •  oil for frying
