Cupcakes with Buttercream Icing

Method

  • Heat Oven at 200 degrees.
  • Fill baking tray with 12 cupcake cases.

  • Add butter and sugar to a bowl and cream by folding together.
  • Beat eggs into the mix a little at a time then add the vanilla extract to the mix.

  • Fold the flour into the mix then add 1 tablespoon of milk to get thin the consistancy slightly.

  • Spoon the mix into the cupcake cases half filling each case.

  • Bake in the oven for approx 15 mins then remove from oven and set aside until cool.

  • To make the buttercream icing, mix the butter in a bowl to soften it.
  • Add the icing sugar to the butter in small amounts ensuring it is mixed through without lumps.

  • Add a teaspoon of milk if the mixture is tough and not soft.
  • Add food colouring and mix until blended throughout buttercream.

  • Cover the buttercream over top of cupcakes using ur prefered technique.

    • 4oz caster sugar
    • 2 eggs
    • 1 teaspoon Vanilla Extract
    • 4 oz self raising flour
    • 5oz Butter
    • 10oz  Icing sugar
    • 3 tablespoons milk
    •  food colouring of your choice
