Cupcakes with Buttercream Icing
Method
Heat Oven at 200 degrees.
Fill baking tray with 12 cupcake cases.
Add butter and sugar to a bowl and cream by folding together.
Beat eggs into the mix a little at a time then add the vanilla extract to the mix.
Fold the flour into the mix then add 1 tablespoon of milk to get thin the consistancy slightly.
Spoon the mix into the cupcake cases half filling each case.
Bake in the oven for approx 15 mins then remove from oven and set aside until cool.
To make the buttercream icing, mix the butter in a bowl to soften it.
Add the icing sugar to the butter in small amounts ensuring it is mixed through without lumps.
Add a teaspoon of milk if the mixture is tough and not soft.
Add food colouring and mix until blended throughout buttercream.
Cover the buttercream over top of cupcakes using ur prefered technique.

- 4oz butter. softened
- 4oz caster sugar
- 2 eggs
- 1 teaspoon Vanilla Extract
- 4 oz self raising flour
- 5oz Butter
- 10oz Icing sugar
- 3 tablespoons milk
- food colouring of your choice
