Method

  • Make the dressing first by blending all the ingredients in a food processor and then set aside.

  • Warm the Tortilla - if I am serving this fresh I warm it on the griddle

  • Take a cooked chicken fillet (preferable grilled or griddled) and cut into small bite size chunks - mix with some dressing enough to coat the pieces, then mix in some roughly torn cos lettuce.

  • Lay out the tortilla and spread with the chicken and lettuce mixture , grate some parmesan on top and then roll up and cut diagonally through the middle of the roll.
  • Tips

    • Sometimes I add avocado

    • 1 Tortilla
    • 1  fillet of Chicken
    • Handful of  cos or romaine hearts
    • 1 oz Parmesan Cheese
    •  
    • FOR THE DRESSING
    • 1 clove garlic
    • 6 tablespoons Mayonnaise
    • 2 anchovies
    • 3 tablespoons Olive Oil
    • 3 tablespoons lemon Juice
    • 1 oz Grated parmezan cheese
    •  salt and pepper to taste
