Make the dressing first by blending all the ingredients in a food processor and then set aside.
Warm the Tortilla - if I am serving this fresh I warm it on the griddle
Take a cooked chicken fillet (preferable grilled or griddled) and cut into small bite size chunks - mix with some dressing enough to coat the pieces, then mix in some roughly torn cos lettuce.
Lay out the tortilla and spread with the chicken and lettuce mixture , grate some parmesan on top and then roll up and cut diagonally through the middle of the roll.
