Method

  • Mix together digestive bran, cake flour, salt, bicarb, cinnamon and mixed fruit.

  • Add eggs, sugar, oil, milk and vanilla essence.

  • Place spoonfuls into muffin pan and bake at 400F for 10 minutes.
  • Tips

    • 1. Add dried fruit of your choice
      2. Reduce fruit portion (can get very sweet)
      3. can freeze muffins and defrost when needed

    • 2 cups digestive bran
    • 2 ½ cups cake flour
    • ½ tsp salt
    •  tsp bicarbonate of soda
    • 1 tsp cinnamon
    • 1 - 2 cups mixed fruit
    • 2 eggs
    •  cups brown sugar
    • ½ cup oil
    • 2 cups milk
    • 1 tsp vanilla essence

    A delicious source of fibre and high in sugar (not sure it bothers me though... yummy!)
