pre heat your oven to 180C. Then prepare you cupcake tin and line it with 12 cupcake liners. You will then need to creat a strong coffee, by placing coffee and a little bit of water into the how ever many coffee granules you would like.(depending on what ever your taste it, you will also need enough for your butter cream)
First cream your butter and sugar together, until light and fluffy, once light and fluffy beat in the eggs one at a time. Once all of the eggs have been beaten into the batter beat for about 2 minuets. Then sift in the flour and fold in with a spatula until all combined. Then fold mix in the 4tbs of your strong coffee mixture once all mixed in. Get an ice-cream scoop or a large spoon and divide the mixture between the cupcake liners. Place the cupcakes into the pre heated oven and cook for 10 to 15 minuets. You will know they are done when you place a skewer in the middle and it comes out clean.
Whilst your cupcakes are cooling you can creat the butter cream. First Beat your softened butter and icing sugar together, when the butter and icing sugar has turned fluffy and pale finally you will need to add the 5tbs of coffee.
Cut your walnuts into small peices.
Once your cupcakes have cooled pipe the butter cream onto your cakes and then a handful of walnuts.
