Apple Toffee Cake

Method

  • Grease a round cake tin (22-23cm) - Toss some flower over it so the cake doesn't stick to the tin.
  • Melt the butter in the microwave for 30sec and whisk this together with the sugar until it's light and fluffy.
  • Gradually add the beaten eggs with a little flour after each addition. Gently fold the in the remaining flour until all is combined. Add the chopped apple and gently stir in 3/4 of the can caramel.
  • Pour the mixture in the tin, arrange some apple slices over the top and spoon the remaining caramel over the top.
  • Bake for 1 hour and 15 minutes at 175C, but keep an eye on it for it might need a bit less.

    Ingredients

    • 400 gram Apples chopped in cubes
    • 397 gram Can Caramel or dulce de leche (or use Nestlé caramel)
    • 150 gram butter softened
    • 100 gram caster sugar
    • 175 gram Self Raising Flour
    • 1 pinch salt
    • 2 sachets Vanilla sugar
    • 1  small apple cut in slices
    • 4  small eggs

    I tried this Apple Toffee Cake out only yesterday but wanted to tweek it and share it. It's so good, we seriously overate.
