Broccoli, Mushroom and Sweetcorn Soup

Method

  • Heat 2 tbsp of butter in a pan, add onion and garlic, saute for 2-3 minutes.
  • Cut broccoli into small florets and add to pan with mushrooms. Saute another 2 minutes. Add stock and bring to boil.Simmer for 15 minutes.
  • Blend remaining butter with flour and stir into the soup. Stir in cream and corn and bring to boil. Season with salt and pepper and Enjoy!!!!

    • 1 onion chopped
    • 3 garlic cloves. crushed
    • 1 head of broccoli
    • 70z/200g button mushrooms
    • 10oz/280g tinned sweetcorn
    • 3tbsp Butter
    • 800ml veg/chicken stock
    • 1tbsp Flour
    • 100g Cream
    • 1tbsp chopped parsley
    • to taste salt and pepper

    This is a recipe I tried out a few weeks ago and it's as lovely as it sounds. Very tasty and my daughter loves it
