Strawberry Tiramisu

Method

  • In a food processor, puree the quark, soft cheese, most of the icing sugar and orange zest. Transfer to a medium sized bowl and fold in the creme fraiche.

  • In the same processor (no need to clean), puree 200g of sliced strawberries, the caster sugar, orange juice and liquer (if using).

  • Pour the strawberry puree into a glass bowl (or into 6 wine glasses).

  • Top the puree with sponge fingers and cover with some more puree. Top with the remaining sliced strawberries then half of the cheese mixture.

  • Top with any remaining sponge fingers, more puree and cheese mixture.

  • Cover with Clingfilm and keep in the fridge overnight (or at least a few hours). Garnish with the reserved strawberries just before serving and dust with a little icing sugar.

    • 150 g Quark
    • 3 tbsp. Soft cheese
    • 6 tsp. Icing sugar
    • 1 Orange. zest and juice
    • 150 g Creme Fraiche
    • 450 g Strawberries hulled and sliced (reserve a few for garnish)
    • 2 tbsp. Caster sugar
    • 2 tbsp. Orange flavoured liquer (optional)
    • 100 g Sponge fingers
