Diabetic Meat Loaf with Spicy Barbecue Sauce

Method

  • Pre heat oven to 180 c or 350 f.

  • Mix together minced beef, breadcrumbs, onion, curry powder, parsley and egg in a mixing bowl. Stir until mixture is well combined.

  • Add milk and continue stirring until mixture is smooth,

  • Shape mixture into a loaf and place in a baking dish.

  • Bake in oven for 30 minutes.

  • Remove from oven and drain off surplus fat.

  • In a saucepan combine water, tomato sauce, worcester sauce, vinegar, lemon juice and coffee. Bring slowly to the boil, reduce heat and simmer for 5 minutes.

  • Pour sauce over meat and return it to the oven.

  • Bake for further 20 - 30 minutes, basting frequently with sauce.

  • Remove Meatloaf from oven and place on serving plate.
  • Mix the cornflour with tbsp water to a smooth paste. Add the paste to the sauce in the baking dish, bring back to the boil, stirring constantly until thickened.

  • Pour the thickened sauce over the meatloaf. Serve with vegtablels or cold with salad.
