Egg Fried Rice

This is my version of a chinese Classic.I love it because it's so versatile.Just add or omit what ever you like to get it to your taste.


1 Heat wok or large frying pan over a high heat.

2 Add oil & when hot & slightly smoking add eggs & whisk
until just set.Remove from wok & drain on kitchen paper,
Set to one side.

3 Reheat wok,add oil & when hot add garlic.Cook 'til golden
then discard.

4 Add bacon & stir fry for 2-3 mins,then add onion & peppers.

5 Cook until onion & peppers have softened,then add
mushrooms & frozen peas.Cook for further 5 mins
6 Put rice into wok & mix with all the other ingredients.

7 Stir fry for 5 mins until heated through.Add omelette
& chop through rice.Drizzle with sesame oil & serve.
