Chicken & Bacon Cooked in Sherry

Old English recipe I cut out of a magazine many years ago

Method

Take an oven prove dish
place chicken breast in bottom and then layer up
with slices of pepper, onion and tomatoes
(Add other items like garlic mushrooms/lemon if you want).
Next
Salt and pepper.
Then place two pieces of bacon over each chicken
piece.
Pour over the sherry (medium dry)(enough to cover 1/4 ".
Cover with foil and cook gas 5- 1 hour
last 20 mins take foil off to brown bacon.

(use juices to make gravy and serve with potatoes)

Bacon 4
Salt And Pepper pinch
Onion 1
Sherry ¼ -½ pint
