Summer Mint, Chilli and Almond Pesto Pasta

a fun and exiting recipe i loved from my brothers notes.


Finely dice chilli
Peel, deseed and dice tomatos
Peel and crush garlic
Blanch Almonds
Pick mint leaves
Combine mint, good olive oil, garlic and salt to food processor.Blend till combined then add the almonds and process again. Finally add tomato and pulse till just crushed. Add to hot pasta with some cooking liquid from the pasta to loosen the sauce. Finish with olive oil chilli and a squeeze of lemon if desired.

Too easy!
