Mediterranean Cous Cous

Method

Chop courgette, aubergine, mushrooms, tomatoes, red pepper and garlic cloves.

Saute in pot with some olive oil for about 5 minutes.

Add in passatta, basil and salt and pepper.

Simmer for 10-15 minutes or until veg is softened.

Meanwhile weigh out 100g of cous cous into large bowl, pour 125ml of boiling water on to cous cous and stir quickly then cover with plate and leave for 5 minutes.

Using a fork, break up cous cous and then add tomato/veg mix.

Eat on its own or in place of potatoes/rice/pasta.
