Babys' Veggie Pasta

Method

Dice all vegetables and fry in a large saucepan with a drizzle of olive oil and garlic on med/high heat for 5-10 mins. Add chopped tomatoes and carton of passatta. Heat till simmering, then add herbs, turn to low heat and cover. Leave to cook through for around 20 mins, stirring occasionally. Remove bay leaves once vegetables are tender and pour mixture into a blender and blend to desired consistency. Stir this into cooked pasta, add a little grated cheese if desired. For and adult dish try adding cooked bacon or chicken strips or tuna.

Hints 'n' Tips

This recipe makes a large batch of pasta sauce which can be portioned and then left to cool and frozen, ideal for quick baby meals. The vegetables can be changed to suit whatever you have in the fridge.
