Myrna's Birthday Cake

Great recipe for birthday cake, Hot butter milk sponge cake - my kids love it. Making the sponge is quick, it's all the icing that takes the time.

Sift Dry ingredients together THREE times. Beat eggs and then add sugar until thick and creamy. Add vanilla. Fold in the dry ingredients slowly, meanwhile have the milk and butter in a pot in the boil. When the dry ingredients are all folded in, and the milk and butter has frothed up, quickly pour in frothing milk mixture into cake mixture and mix well. Pour into 2 greased large tins and bake in the oven (400 degrees or gas mark 6) for 15 - 20 mins. When cold ice with Carol's butter icing

Milk 5oz
Baking Powder 1/2 Tsp
Caster Sugar 11 oz
Vanilla Essence 2 Caps
Self Raising Flour 12 oz
Eggs 4
Butter 2 ½ Ounces

Got to tell you I've made this cake too and it really is fab. My kids and their friends all love it because it is so light and fluffy and when you put strawberries and cream in the middle it is unbeatable!!!
Made this cake for my husbands 40th and it went down really well. I put double cream, strawberries and bananas in the middle - what a hit!
this really is a light n tasty cake. How far in advance can it be made n kept. Cld I make it Sat n it still b O.K on Sunday?
You can make this cake in advance but if you are going to do it more than 1 or 2 days in advance i tend to wrap it in cling film and freeze the cake - bring it out and defrost day of use
I am going to make my son a T-REX bday cake and have a template - a 9" tin is what they suggest, but I prefer your recipe - are the amounts enough to make that size cake?
yes this is quantities for a large 12" cake tin - but we usually make 2 and if you want to make a smaller cake use 3 eggs and adjust the quantities accordingly!
Does this cake come out firm enough to cut/shape??
cna you use any kind of coloirs on this cake
yes i tend to use coloured buttercream icing but have also coloured marzipan to make different effects
