1. Heat oven to gas mark 5 / 190/170 fan.
2. Grease a large baking sheet. Roll out the puff pastry to the size of the baking sheet allowing for a 2cm edge all around. Place the pastry on the sheet.
3. Spread the tomato puree on the pastry, top with the onions, broccoli, chorizo and thyme. Sprinkle crumpled blue cheese over top and season with salt and pepper.
4. Bake for approx 25 mins until golden.
