Caribbean Turkey Curry


1. Soften the chopped onions in the chicken stock
2. Add the mangoes then the raisins, desiccated coconut, ginger, salt and pepper and the coconut milk.
3. Bring to the boil then cook slowly.
4. Mix the curry powder with the flour and rub into the turkey.
5. Add the turkey into the cooking mixture.

If using raw turkey fry it with the curry powder and flour until cooked on both sides. Then add to mixture.

Wasn't sure about this recipe but gave it ago anyway, so glad i did, it was yummy. I cooked a large Turkey Drumstick then cut the meat off. It feed the three of us. I didn't use the flour as it appeared thick enough without adding it. Will do this recipe again.
