Christmas Apple & Cinnamon Loaf

The smell of this loaf always reminds me my childhood christmas, when I was so busy with my mum-baking- in the kitchen on christmas day.


1. Preheat oven to 350°F (175°C/Gas Mark 4)

2. Lightly grease a loaf tin.

3. In a mixing bowl, combine the flour, salt, baking soda, sugar and cinnamon.

4. Mix the melted butter, egg, milk and vanilla essence. Stir and mix well, whilst folding in the raisins, chopped apples, and walnuts.

5. Pour the mixture into the loaf pan.

6. Sprinkle the top with chopped walnuts.

7. Bake for about 45 minutes.

8. Leave to stand for 10 minutes in pan before transfering to wire rack to cool.


Vanilla Essence 1 tsp.
Milk 0.5 cup
Egg 1
Butter 0.5 cup
Salt 0.25 tsp.
Sugar 1 cup
Cinnamon 1 tsp.
Baking Soda 1 tsp.
Flour 2.5 cup
Apples.peeled. Chopped 1 cup
Raisins 0.5 cup
Chopped Walnuts 0.5 cup

Baron de Ley Club Privado Reserva Rioja

The Baron de Ley winery was founded by a prestigious group of Rioja professionals in 1985. They were quite unique in their approach as they modelled the winery on a Medoc chateaux, which was a pioneering move at that time for producers in the Denominacion de Origen Calificada Rioja. This wine is aged in new oak casks for 20 months prior to resting in the bottle for 2 years before release.
