Caribbean Salad

Method

Cut away two thick slices of mango either side of the stone, cut into slices and peel.

Thinly slice the tomatoes, cucumber and red onion, and arrange on a large serving plate (or on individual small plates).

Blend the oil, lemon juice, crushed garlic clove, pepper sauce in a mixer or blender and add salt and pepper to taste. Add a pinch of sugar and mix again.

Pour the dressing over the salad and decorate with snipped chives.
