Yinka Thomas' Piri Piri Fish

All the flavours of the season, bursting with goodness: these ideas from Yinka Thomas will boost your vitality

Method

1. Cut the fish fillets into slices 2cm thick.
2. Trim and chop the chillies and red pepper. Simmer these in a pan with the other sauce ingredients for 5-10 minutes until soft. Process in a blender until smooth. Coat the fish with most of the sauce and refrigerate for at least an hour. Cook any remaining sauce on a low heat for 5-10 minutes.
3. Cook the fish under a medium hot grill for 2-3 minutes each side or until done to your liking. Serve with the spinach and extra sauce poured over.
