Slow cooking has come back into its own as a low-energy, low-cost method of preparing a tasty, hot meal. Originally a 70s tool for the suburban housewife, the slow cooker has gained in popularity and is no longer seen as a retro piece of kitchenalia. With time-poor, cash-poor working people, this method of cooking allows meals to be put on earlier while you can pick up the kids from school or do another split shift. Cheaper cuts of meat are fair game – no longer tough or chewy – chicken thighs, lamb shoulders and belly pork also go into making a nutritious home-cooked meal.
