Description
Someone in work brought this in on their birthday, it was a big hit at the office. I got the recipe off them and it's went down a treat everywhere I've made it.
Method
-
1
Put the digestives in a blender until they are crumbs, or just put them in a sandwich bag and whack them with a rolling pin.
-
2
Melt some butter, mix with crushed Digestives.
-
3
Line the bottom of the cheesecake dish with the base.
-
4
Blend the cheese and icing sugar together.
-
5
Whip up the double cream.
-
6
Mix the cream with the cheese and icing mixture.
-
7
Break up the Mint Aeros into chunks (by knife or hand). Best to leave the odd big chunk to give more flavour.
-
8
Blend this with the rest of the mixture.
-
9
Pour into the cheesecake dish. Don't play with it too much, just be as even as you can.
-
10
Put into the fridge overnight.
-
11
Suggest serving it with ice cream but its wonderful on its own.
