Debbi's Easy Hollandaise Sauce

This is a no fail version of a classic sauce to accompany fish

Method

Heat lemon juice & vinegar in a small pan until bubbling slightly.

Melt butter in another pan

Blitz egg yolks, sugar & salt for 2 seconds then tricke in the vinegar mix, Continuously blitzing.

Do the same with the melted butter.

Ingredients

Caster Sugar 1 Tsp
Egg Yolks 4
Butter 250 G
White Wine Vinegar 1 Tbsp
Lemon Juice 2 Tbsp
Salt Pinch
