A delicious summer dessert that is simple to make.

Method

    Pre-heat oven to 180 C.
    Cut the peaches in half and remove the stones. Place in a baking dish, cut side up.
    Crush the amaretti biscuits (put them in a plastic bag and bash with a rolling pin). Mix the crushed biscuits together with the egg yolk, butter and sugar (and ground ginger,mic using). Divide the mixture between the peaches, spooning on top, and in the hole where the stone was. You may find that you cover the top completely if you have enough mixture - it will depend on the size of your peaches.
    Bake in the oven for 20 โ€“ 25 minutes. Dust with icing sugar and serve hot with crรจme fraรฎche, Greek yogurt, cream, ice cream or mascarpone.

Chef's Tips

Variation: Add 1 tbsp amaretto liqueur to filling mixture. Donโ€™t buy it just for this, but if you have some, I recommend adding it!

This sounds delicious - I love peaches ad almond biscuits (Amaretti) - but I wonder, please can you tell me if one can used canned peaches instead of fresh peaches in this recipe?
