dedicate this recipe to World Peace!! These cupcakes are just devine, super vanilla, super soft & spongy with the most gorgeous creamy frosting. Pure indulgence!

Method

    **MAKING THE CUP CAKES**

    First of all, preheat your oven to 180oC and place muffin size paper cases in your muffin tray tins

  3. 3

    In your electric mixer, cream the butter and castor sugar together until it's nice and creamy.

    Now add the eggs, corn oil, vanilla & strawberry essence and mix well.

  5. 5

    Now add the warm milk and mix well.

    In a separate bowl, sieve the self raising flour, icing sugar (*or vanilla sugar), baking powder, custard powder and powdered cream and mix gently together.

    Begin by folding the flour in to your sugary mix and use a tablespoon of your flour mix until you reach a very creamy batter and let it rest for a moment or two.

    Using a tablespoon, spoon the mixture into each case (12) and then using a teaspoon, spoon the remaining mixture into each casing for even quantity.

    Place your cakes on the middle shelf of your oven and bake for 17 minutes at 180oC

    Remove from the oven and allow them to cool before applying the frosting.

    **MAKING THE FROSTING**

    A) First of all, if you can, remove the bowl from your electric mixing machine and sieve the icing sugar into it.


    B) Now, sieve the powdered cream and custard powder and mix well with the icing sugar.

    C) Using the microwave, please your butter in a cup or bowl and cover with cling film to avoid splashes and microwave on high for 40 seconds until it is fully melted.

    D) Return your bowl to its locked position and on a low speed, add the milk, glycerine, liquid glucose syrup, vanilla & strawberry essence and whip until it is very soft and creamy

    E) If you're very skilful, you can put the frosting in your piping bag and pipe directly onto the cakes, but if you're not so advenurous(!), then simply spoon it ontop of the little cakes and spread it over the crown of the cupcake until the frosting is covering it completely.

I have just retirned from asdas,tried to buy nestles powdered cream,but no luck any ideas on were to get it or any other product i could replace it with Thank you.
