Ingredients
- 2 Large Sweet Potatoes
- 3 Large Parsnips
- 1 Carrot
- 1 Onion
- 2 Bay Leaves
- 1 Bouquet Garni
- 2 pts Chicken Stock
- 2 Heaped Table spoons of Cornflour
- 25g Butter
- Salt and Pepper to Taste
- 250ml Single Cream

This is a great soup, it's quite sweet and is great when the weather cools.

Chop the Onion, sweet potato, Carrot and Parsnips
Melt the Butter in a pan and sweat the onion
Add the carrot
Take off the heat and stir in the Corn flour until everything is coated
Return to the heat and stir in the stock gradually and add the remaining vegetables, the bouquet garni and the bay leaves
Bring to the boil and then simmer for an hour, add additional liquid if reducing down too much
Take off the heat and remove bouquet garni and bay leaves
Blend until smooth
Return to the heat and bring back to the boil, add the cream to taste, then and add salt and pepper to taste
Once heated serve with Croutons
