- 100 g. red split lentils
- 15 ml. oil
- 1 onion, chopped
- Β½ tsp. chilli powder
- Β½ tsp. grated root ginger
- ΒΌ tsp. grated nutmeg
- 1 tin coconut milk
- some stock (veg. or chicken)

Heat oil in a saucepan, add onion, lentils, chilli, ginger and nutmeg, stir about until onions soften. Add stock and coconut milk, bring to boil, then lower to simmer for 40 mins or so. Stir once or twice, and check it doesn't get too thick, add more stock if ness.
Season and serve. A garnish of coriander leaves, or mint, and a teaspoon of thick plain yoghurt in centre of each bowl looks nice against this soup's golden colour.
Chef's Tips
I like plain / cheese scones with soups as a change from crusty bread.
