- 1 tin Butterbeans
- 1 Sweet onion- finely sliced
- 4 Ripe tomatoes- quartered
- Small handfull Dill - chopped
- Large handfull Parsley - chopped
- ½ Lemon - juice of
- Good glug Olive oil
- To taste Salt & Pepper

This is a delicious fresh salad, perfect for a BBQ and makes the most of fresh tasty herbs.

Place all ingredients in your serving bowl and coat well with olive oil and lemon juice. Leave to marinade for 30 minutes, then serve!
Lovely with grilled lamb and crusty white bread. Also tastes good the next day, so fine to prep in advance.
