Quick & Easy Fairycakes
Ingredients
- 115g Unsalted Butter
- 115g Caster Sugar
- 2 medium eggs
- 115g Self raising flour
- 5ml Vanilla extract

Description
This is by far the easiest fairy cake recipie and I use it every time I wan't to engage the kids in some home baking.
Method

1) Pre heat the oven to Gas 4 1/2 and line a cupcake tray with 12 cases
2) Making sure the butter is at room temperature, beat/whisk until light and fluffy. Add the sugar and beat/whisk until pale and well blended.
3) Whisk in one egg at a time, beating well between each one to ensure the batter doesn't curdle/split and add the vanilla.
4) Add the sifted flour in 2 batches and fold in gently so you don't start working the gluten and make the cake tough.
5) Divide into the cases, 12 larger or 18 small, and bake in the centre of the ovan for 20-25 minutes or until slightly golden on top. Leave to cool on a wire wrack.
You can leave plain, top with a simple icing, or frosting, or even pipe a delicious butter cream and decorate with sweets or fruit.
This is so versatile you can add any flavouring or colouring to the mix and lets your children be really creative.
