Ingredients
- 3 tbls A small espresso or strong black cofee
- 140g Butter ( diced/cubed)
- 5 Free Range Large Eggs ( seperated)
- 200g Golden Caster Sugar
- 1 teaspoon Baking Powder
- 2 tbls Cocoa Powder
- 90g Plain Flour
- 180g Fine Dark Chocolate ( chopped)

a chocolate espresso cake that sinks in the middle as it cools and has a cake texture on the outside moving to a fudgy soft but dense centre mmmm

Preheat the oven to 180C/Gas Mk4
Line the base of a 21-13cm shallow springfrom cake tin with silicon/greaseproof parchment paper and grease well with butter on both the base and sides.
Chop the chocolate ( if you be bothered, I find it melts from squares perfectly well) and then place into a heatproof bowl which is sitting over a pan of simmering water.
Make the espresso or strong coffee.
As soon as the chocolate starts to soften and melt, move gently and add the expresso/3 tblsp's of black coffee, and leave for 2-3 mins. While this is happening, seperate the 5 eggs.
Stir the chocolate very gently, then when melted, add the chopped butter and stir gently until all has melted, then turn off the pan of water.
Meanwhile, Beat the egg whites with an electric mixer till stiff ( peaking) and then fold in the sugar- pref with a metal spoon. In a seperate bow, sift and mix togther the flour cocoa and baking powder.
Beat the eggs yolks.
Remove the chocolate from the heat and quickly stir in the egg yolks.
Then slowly,firmly and gently fold the melted chocolate mixture into the egg whites - without knocking all the air out, again with the metal spoon.
Lastly, sift the flour, cocoa and baking powder into the mixture and continue to fold gently but firmly but dont overmix !
Just enough to fold in the flour.
The mixture should be wobbly and light.
Scoop out into the springfrom cake tin and bake in the pre-heated oven for 35 mins.
Experiment with the time with your own oven, I have a non-fan gas oven and 35 is about right, fan ovens i guess would be less.
Play with the times depending on how gooey you like the like the centre - my wife like to spoon this up with a teaspoon.

if can use espresso, if not any sort of strong black coffee. You can make with instant (a poor substitute but better than nothing)Essentially it's just 3 tablespoons of fresh black coffee so make a pot or a mug then just drink the rest while you make it :-)
