Ingredients
- 4 small chicken breast fillets (skinless) - diced
- 4 rashers smoked back bacon diced
- 1 large bag mixed salad leaves
- cherry tomatoes or a jar of drained sun dried tomatoes
- 1 medium red onion finely sliced or chopped
- to taste vinagraite or other salad dressing (Paul Newman's Italian dressing is great)
- small amount veg or olive oil
- salt & pepper
- optional fried potato cubes or croutons
- parmesan shavings

Description
Easy & Quick when you need to rustle up a quick lunch or supper. I tend to have most of the ingredients in my fridge/freezer so I can look organised even tho I'm not usually :-)
Method

1) Fry bacon pieces in a large frying pan until crisp - remove & reserve
2) Fry chicken pieces in bacon oil/juices (add a bit more oil if required)until cooked through
3) While chicken is cooking - make up the salad & dress lightly with dressing of choice
4) When chicken is cooked, toss through the salad with the bacon bits
5) Sprinkle with the parmesan shavings before serving
Optional Extras to make it more filling or just to go further :-
i) Use up any left over cooked new potatoes that are lurking in the fridge by dicing & frying in the chicken / bacon juices until hot & crispy then sprinkle over the salad before serving - add a bit more oil of a knob of butter if too dry to fry
ii) Dice a couple of slices of bread & fry in the chicken / bacon juices (adding a bit more oil if needed)until crispy - sprinkle over the salad before serving - Croutons can be coated in the juices & baked in the oven until crisp if preferred
Note - If doing the optional extras, cover the chicken in foil to keep warm until they are ready but don't worry the chicken is meant to be warm not blazing hot
