Description

My first time making this was on Christmas day 2010 and it turned into a hit with my family.

Method

    Wash and chop the onion, carrots and celery.

    In a large saucepan or flameproof casserole, heat the olive oil over medium heat.

    Add the onion, celery and carrot and cook 5 minutes or until softened.

    Add the lentils and ham hock and top up with water. (Approx 12 cups).

    Bring to the boil and then reduce heat to low. Cover, and simmer for 35 to 45 minutes or until lentils are soft but not falling apart.

    Remove ham hock from soup. Remove any meat from bone and chop coarsely. Add to soup.

    At this point I choose to liquidise the soup into a smooth consistency but that is personal choice.

    Season with salt and pepper.
