Ingredients
- 250g Lean Minced Beef
- 1 Large Onion
- 2 Cloves of Garlic
- 2 Whole Chillis (seeds optional)
- 1 Bell Pepper (red or green)
- 1 Celery Stalk (finely diced)
- 1 Tin Kidney Beans
- 1 Tin (400g) Chopped Plum Tomatoes
- 1 Glass Red Wine
- 1 tsp Ground Cumin
- 1 tsp Ground Coriander
- 1 Splash Worcester Sauce
- 1 Beef Stock Cube
- To Taste Salt & Freshly Ground Black Pepper
- 1 Bunch Roughly Chopped Fresh Coriander

Description
Chilli Con Carne is my all-time favourite meal. The hotter, the better!
Method

Dry fry the mince to brown in two batches to avoid stewing. Set aside.
Saute the onions, garlic, chillis, pepper, kidney beans & celery in a glug of olive oil until softened, and the onions are translucent.
Add the cumin & coriander and stir.
Pour the mince into the vegetable mixture. Stir.
Add the glass of red wine, simmer for a minute or two to burn off the alcohol.
Add the tin of tomatoes, splash of Worcester Sauce & crumbled stock cube.
Simmer for half an hour, then season to taste.
Before serving stir in the freshly chopped coriander to wilt.
Serve with boiled rice and a green leafy salad.
Hope your mates enjoyed the chilli!Remember, you can always add some chilli powder or tabasco sauce if you want some more spice at the seasoning stage, but you can't take it out if it's too hot!
This Chille con Carne looks amazing and really not thjat difficult to cook. Some of my mates are coming over for dinner and video games tonight, I promised to cook.....Oh dear!...... but I think I should be able to manage doing this - they all like spicy food so think Ill add an extra chill or two....LOL!
