Ingredients
- 4 chicken thighs
- 4 chicken drumsticks
- 8 rashers smoked streaky bacon
- 1 litre chicken stock
- 1 bay leaf
- a few sprigs of thyme
- 3 sticks celery sliced
- 250g sliced carrots
- 500g winter greens, stalks removed and leaves shredded
- a knob of butter
- 4 tbsp creme fraiche
- small handful of chopped parsley

1 - Remove the skin from the chicken. Wrap each piece of chicken in a rasher of bacon and secure with a cocktail stick. In a large shallow pan that will hold the chicken in a signle layer, bring the stock and herbs to the boil. Add the bacon-wrapped chicken, turn down the heat and cook in the barely simmering stock, uncovered for 1 hour. Turn now and again so the chicken cooks evenly.
2 - Remove the chicken and set aside on a plate. Cover with foil to keep warm. Turn up the heat of the stock, add the celery and carrots and bubble uncovered for about 10 minutes until the stock has reduced and the veg is tender.
3 - Meanwhile, in another pan, cook the greens in the butter with a splash of water, stirring until just wilted. Season.
4 - Take the stock and veg off the heat and stir in the creme fraiche. Season and return the chicken to the pan, removing the cocktail sticks. Scatter with the parsley and serve with the greens.
