Ingredients
- 1 tbsp Sesame or Groundnut Oil
- 3 Spring Onions (chopped well)
- 1 chunk Ginger (fresh)
- Big handful Bean Sprouts (chopped)
- 1 Carrots (chopped)
- 1 Peppers (chopped)
- 2 larg blooms Broccoli
- 2 to 3 White Radish (chopped)
- ยฝ Aubergine (diced)
- As you like Rice or Noodles
- 150 mls Chicken or veg stock
- To taste Soy Sauce (light)

Mixed with rice or wok-noodles and chicken strips, a wholesome quick meal and kids love it

1. All veg should be well chopped and pieces should be around the same size for uniformity of cooking. Choose any veg really that you have available in the fridge.
2. Pre-cook the rice or ready to wok noodles
3. Put the oil into the wok (or frying pan and heat till simmering.
4. Toss in the spring onions and ginger and cook for half a min - stirring all the time.
5. Toss in all the other vegetables.
6. Cook it all up but make sure you stir about the veg all the time - hence "Stir Fry".
7. Now throw in the noodles or rice.
8. If you prefer a kind of soup (or Ramin style) pour in the stock now.
9. Add the soy sauce (not too much as Soy is very salty and not good for the kids or you for that matter).
10. Now serve while hot.
TIP: you could also toss in cashews, sweetcorn, mushrooms, courgettes or spinach. I have found that tossing in some chicken breast or pork strips (pre fried of course)can also make a lovely addition - just experiment.
