- 1 Β½ lbs thinly sliced potatoes
- 2 cups diced ham
- 4 tbs butter
- Β½ cup chopped onions
- Β½ cup chopped celery
- 1 cup milk
- 1 cup double cream
- ΒΌ tsp mustard powder
- large handful chopped parsley
- salt & pepper
- 2 cups grated cheese

Found this while trying to use up 1/2 baked ham. Makes a bit of a change. Easy to prepare.

Heat oven to 170c/gas 4.
In a large saucepan, melt butter, add onion and celery and sautΓ© until tender. Stir in flour until smooth. Gradually add milke and cream, stirring constantly. Add and salt & pepper to taste. Continue cooking, stirring, until thickened. Stir in sliced potatoes and diced ham. Transfer mixture to a greased baking dish. Cover tightly with foil and bake for 45 minutes. Remove foil and bake for about 10 minutes longer, or until potatoes are tender. Sprinkle cheese over the top and bake for a few minutes, or until cheese is melted.
