Description

Grandma made this for the walking group .. she added Baileys - as she is Mrs Bailey - so she could call it Baileys Tiramisu. It was an instant hit.

Method

    Sift the icing sugar into the Mascarpone, beat together with the vanilla and Baileys.
    In a seperate bowl whip the cream until it reaches a soft peak.
    Mix the cream and Mascarpone mix together. Place in the fridge for a bit
    Soak the Spoinge fingers in the coffee.
    Either in a large dish or 4 individual ones layer up the sponge fingers and the cream mixture. Finish with swirls of the cream mixture.


    Sprinkle the grated chocolate on top.
    Serve and enjoy - Can be stored in the fridge - is good with a glass of Baileys over ice

I tested this out on my Tiramisu-mad Sister, before making it for a 6-person dinner party and it went down a storm on both occasions.

Wow - just fantastic!
I used some posh-looking 'Ladies fingers', which were a bit softer and wider than normal sponge fingers. The Bailey's is an inspired addition. I'm going to try it next time with 1 less tbs of icing sugar - although that might be a mistake - I had to wrestle the dish from my husband in order to save the rest of it for the next day!
