Description

This is a very old recipe from about 1967 when hardly anyone had tasted this sort of cheesecake. Up to this time 'cheescakes' were puff pastry cakes topped with coconut strands.

    Melt butter and add crushed biscuits, stirring well to combine. Line 8" loose-bottom cake tin and press down firmly with the back of a spoon. Cool in fridge.

    Heat 5 fl oz fruit juice and dissolve jelly. Allow to cool but not set. Discard rest of juice. Blend together cheese, cream, jelly, chopped drained fruit(reserving some whole pieces for decoration) and tip into tin.

    Cool and chill until set.
    Decorate with fruit and serve.
