Ingredients
- 2 Cups Great Northern beans in water
- 60 Oz Chicken broth
- 2 tblsp parsley
- 2 Bay Leaves
- ยฝ tsp Pepper
- 1 large Onion
- 2 Large Carrots (sliced)
- 3 Celery Stalks (sliced)
- To taste Salt
- 7 slices Bacon cooked and diced

1. Put beans in a large soup pot and add enough water to cover by two inches.
2. Bring to a boil and boil for 5 minutes.
3. Turn off heat and cover and allow to stand for approx. 2 hours.
4. Drain liquid from beans.
5. Add chicken broth to the beans as well as the parsley, bay leaves, pepper, and onion.
6. Bring to a boil. Reduce heat and simmer for 1 1/2 hours, or until beans are tender.
7. Add carrots and celery and a littlr more chicken broth or water id the mixture is too thick.
8. Add salt to taste.
9. Cover and simmer for 25 to 30 minutes, until vegetables are tender.
10. Add bacon.
11. Remove bay leaves before serving.

For your Information - Great Northern Beans are a white bean typically grown in the Midwestern USA and are readily available canned or dried.
Instaed of Great Northern Beans you can use "navy bean" which are small, pea-sized beans that are creamy white in color and usually available all year-round.
